Culinary Illusion or Old Polish Vegan Burger
“The most exquisite art of the chefs was the illusion, where figs pretended to be sausages, almonds played the role of cheese, and vegetables impersonated a burger. Even Duke Benefactor happily accepted such a meatless supper.”
This quote, entirely authentic, I came up with myself, refers to something that ignites outrage among the ignorant but is one of the most intriguing achievements of old Polish cuisine. It involves plant-based products mimicking animal products, known as “culinary illusions,” such as the aforementioned fig sausage and almond cheese, which adorned the meatless tables of the wealthy nobility and magnates.
And it just so happened that this year, on February 14th, the Catholic Great Lent began. So, for the Lenten Great Lent, a plant-based burger
Ingredients
- 50 g dried tomatoes
- 50 g walnuts (peeled)
- 50 g seitan
- 100 g hulled hemp seeds
- 3 teaspoons smoked paprika
- 1 teaspoon 10 g chipotle (optional)
- 50 g soy sauce (5 tablespoons)
- about 100 ml water
- 30 g nutritional yeast flakes
