I agree regarding the salary amount, but not when it comes to tipping. From the perspective of someone with over a decade of experience in the hospitality industry, both behind the bar and in the kitchen, the salary should be at a level where tips aren't necessary for survival. It's a form of recognition for hard work (and in this industry, the work is very demanding) and good service. Tips are fine, but they should be for going out to enjoy a good meal at another restaurant, not to pay the bills
