Valentine’s Day Menu: Sea Bean Salad with Wakame

In plant-based cuisine, seaweed plays a role in achieving flavors that can be described as “sea-like,” as in this recipe. You can serve it for breakfast on toast, use it as a starter for lunch, or include it as one of the elements in a Valentine’s Day mezze.
Ingredients:
- 100g white beans
- 1 small onion (50g)
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 5g wakame (or 1 sheet of nori)
- 1 tablespoon mustard
- Teaspoon of sugar
- 30–40ml flaxseed oil
- Black pepper
- Salt
Instructions:
1. Soak the beans in cold water for about 8 hours. Drain, pour fresh water, and cook until tender. Allow to cool.
2. Mash the beans with a fork, leaving some lumps.
3. Pour minimal hot water over the wakame and let it sit for about 15 minutes.
4. Dice the onion and add it to the beans along with chopped parsley.
5. In a bowl, mix mustard, lemon juice, sugar, add the wakame, and blend while slowly pouring in flaxseed oil.
6. Mix the sauce with the beans, season to taste with freshly ground pepper and salt.
